Hey guys! I hope you are all having a fabulous day. Today was just such a good day for me. I was in a rut a few days back but today I seem to have found my groove again.
My husband and I have been staying in our home since Nov 2014. We have a fig tree across our front door and I actually only found out about it last year. How did I find out? Well, the parrots that are roaming around Pasadena were feasting on them!! I’ve always loved figs, though I haven’t tried them outside of a fig bar. I see so many yummy looking food with figs that I decided to make sure I try them out this year.
I first used them as a topping on my breakfast oats together with some strawberries. My first verdict: it was pretty bland–taste was very subtle but nonetheless, I know it’s healthy and fiber packed, so I enjoyed it 🙂
This morning, I took my cat for a short playtime outside. I noticed how abundant the figs were on our tree and saw how so many were already falling off and being wasted. I took action right away and picked as much as I could reach. I’m aware of how fast they don’t last so I went over to Pinterest and looked for ways to eat it. At first I thought I was just going to dry them out but I saw this super easy recipe by KitchenKeepers and was immediately sold.
So here’s how I made my Jam/Chutney:
(I use the term Jam and Chutney very loosely because my consistency would fall under both hehe)
- 2 lbs. Ripe Figs
- 1 Ripe Apple (peeled and cubed)
- 1 cup Pure Cane Sugar
- 1/2 cup Apple Cider Vinegar
- 1 tsp. Ground Cinnamon
- 1/4 tsp. Sea Salt
- 1/4 tsp. Red Pepper Flakes
- Wash Figs and cut them into quarters
- In a sauce pan, add all your ingredients. (Everything–fruits, spices, and vinegar!)
- Bring it to boil, stir everything while mashing the figs.
- Lower heat and continue cooking for 30 minutes.
- While you continue cooking it, stir occasionally and mash the figs to your desired consistency.
- When done, transfer to glass containers (I used mason jars that we have sitting at home.)
They are sooo yummy! I can’t believe how easy it is to make 😀
